On the spur of the moment – as Dragonflies are apt to do, I changed direction and decided to make myself a pizza on our grill for lunch. I’d been working outside – needing to escape the home office and experience nature firsthand for a while. I originally had a sandwich in mind, something quick and easy that I didn’t need to cook. But then I spied the whole wheat flat breads that I’d bought and suddenly an idea formed. A grilled pizza…no need to heat up the house, no need to dirty a pan. I threw it together, cooked it and Ta Da! Awesome eats in a snap!
Grilled Genoa Salami, Fresh Spinach and Arugula Pizza
Whole Wheat Flat Bread
Pizza Sauce (I used a jar sauce, but it would be even better with some homemade sauce)
Shredded Mozzarella Cheese
Genoa Salami torn into small pieces
Fresh Spinach leaves torn in pieces
Arugula leaves torn in pieces
I heated up the grill with medium heat over half the of the grill while I put the pie together. Maybe about 5 minutes. I placed the pizza on a piece of foil and placed it on the grill, turning the heat down to low and let it cook for approximately 5 minutes (I think I answered one email and went inside to get something out of my office and to get a plate and silverware). And it was done! It tasted wonderful…the crust was a little crispy in places, but the spinach and arugula were not totally limp. I may try waiting to put the greens on until the last-minute next time so they will be even more crisp.
This summer I plan to expand my grilling skills and think outside the box on what I cook on the grill. I saw a recent episode of a Bobby Flay grilling show and the guest grill master made macaroni and cheese on the grill…wishing my guys liked macaroni and cheese! Oh well! I plan on expanding my dance to include some new options and ways to cook. Here’s to hoping my husband will give up the tongs once in a while to an aspiring Dragonfly Diva Grilling Queen. 🙂
